A fluffy Thai-style omelet with silky egg tofu and sliced fresh chilies, seasoned with a splash of soy sauce. A 5-ingredient, 10-minute dish to eat with hot steamed rice.
A plain chili omelet is a little too ordinary. This version adds egg tofu (the silky tofu sold in tubes at Asian markets) for a thicker, softer, more tender omelet, with a dash of soy sauce for savory depth. It is one of the simplest healthy dishes you can make.
