These Hawaiian-style skewers pair tender chicken with sweet, juicy pineapple and a quick honey soy glaze, grilled until golden and lightly charred. They are easy to make and ideal for spring picnics, cookouts, and family gatherings.

Ingredients

  • 500 g (1 lb) boneless chicken breast, cut into chunks
  • 1 fresh pineapple, peeled and cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 8 bamboo skewers

Instructions

  1. Thread the chicken, pineapple, bell pepper, and red onion alternately onto the skewers and place them in a large dish.
  2. In a small bowl, whisk together the olive oil, soy sauce, honey, garlic, ginger, salt, and pepper.
  3. Pour the marinade over the skewers, turning to coat evenly, and let marinate for 10 minutes.
  4. Preheat a grill or grill pan to medium-high. Grill the skewers for 12 to 15 minutes, turning often, until the chicken is cooked through and golden.
  5. Remove from the grill, let rest for a couple of minutes, and serve.

Tips

  • For deeper flavor, marinate the chicken for up to 2 hours before grilling.
  • Soak bamboo skewers in water for 30 minutes beforehand so they do not burn on the grill.
